
1 slice of a day-old bread
1 tbs vinegar, mild like champagne or apple
1 lb of ripe tomatoes, cored (and peeled-optional) and chopped
1/2 small onion, chopped finely
1/2 cucumber-seedless, peeled and chopped
1 small green pepper or/andJalapeno-cored, chopped
1 garlic clove
1 c tomato juice
salt and white pepper to taste
Soak the bread in a cup of cold water and the vinegar. Pass the tomatoes through a food mill. If you don’t have one, peel them after blanching if you want. Blend everything, including the vegetables and the bread in a blender. Add tomato juice to reach the desired consistency. Season with salt and pepper. Cold and refreshing, you feel younger with every sip.
