Borimir Darakchiev
2 lbs pork, cubed
2 ts oil-canola or sunflower
1 c white wine
2 onions, sliced
1 tbs dry chubritza (Greek oregano)
1 ts paprika and 1 ts hot pepper flakes
salt and freshly ground black pepper
Season the meat with salt and sauté it in a large sauce pan with the oil. Stir and brown the pork cube on all the sides. Season with pepper, paprika and oregano. Pour the wine to deglaze and simmer for 45 minutes until the meat is soft to the fork. Add the onion, mix in with the meat and cook for 5 minutes. It is nice if the onion is a little crunchy. Serve with mashed potatoes or rice.
