
3 lbs Western style pork ribs with bones
1 onion, chopped
2 sour cabbages, cored and chopped
2 bay leaves
5-6 whole all spice berries
5-6 black peppercorns
1 tbs paprika
1 ts hot pepper flakes
5-6 tbs of oil or lard or pork fat or as much as you can handle
1/2 c sour cabbage brine mixed with 1/2 c water (no salt needed!)
In a large saucepan, brown the pork with 2 tbs oil patiently on all sides. Add the brine/water and simmer for 30 minutes. Transfer the meat to a baking pan. In the remaining oil, sautee the onion and then mix in the cabbage and the spices and then cook until wilted. Transfer to the pan and mix in with meat. Bake at 375° F for an hour until browned lightly. Serve with Red!
