
2 big tomatoes or 1 c canned, diced
1 cup roasted red bell peppers
1/2 lb or 1 c crumbled feta cheese
6 eggs
1 tbs oil
salt and black pepper to taste
parsley for garnish
In a large pan cook the tomatoes with the oil until the sauces are reduced. “Mish” in the peppers and the feta cheese and “mash” the eggs until all is holding together.
