1 lb potatoes
1 small onion, finely minced
1/2 lb feta cheese, crumbled
2 eggs
1 tbs parsley leaves, chopped
salt and black pepper to taste
flour for flouring
oil for frying
Yogurt sauce
3 c whole milk yogurt
2 garlic cloves, crushed
2 tbs dill, minced
1 tbs olive oil, optional
salt and black pepper to taste
Boil the potatoes in salted water until soft when pierced with a fork. Peel them and while still warm, mash them or pass them through a racer. Add the feta cheese, the eggs, the parsley, season with salt and pepper. Mix well with hands to incorporate the ingredients. Form into pattzies about 3/ 4-inch thick. Coat both sides of each patty with flour. Fry in hot oil on both sides until light brown.
Serve with yogurt sauce.
