What if you wake up in a friends home in Bulgaria to freshly baked biscuits for breakfast and then you are treated to a professional massage at their home? Well, this is Bulgarian hospitality and this is what good friends do. These are Stefka and Rumen.
2 eggs
10 oz feta cheese, crumbled
3 tbs oil
2 1/2 c flour
1 c yogurt
1 ts baking soda
1 pinch salt
1 tbs butter
Heat the oven to 375° F. Cover a baking sheet with oiled parchment paper. Mix all the ingredients but butter to incorporate to a soft sticky dough. With oiled hands, form golf-size balls and arrange on the baking tray. Bake for about 45 minutes or until golden brown. After you remove them from the oven, brush with the butter. They taste somewhat like biscuits, only better. Serve hot with cold Ayrian. Optionally you can add to the batter chives, herbs, Parmesan cheese and serve as an appetizer.
