
This is a “genius”recipe from the internet. It is so simple to make, it almost feels like a cheat. It is so delicious it will please anybody.
Crust
1/ 4 c Graham crackers crumbs
For an interesting twist, it could be done with 1 1/2 sleeves crushed Saltine crackers
5 tbs granulated sugar
5 tbs unsalted butter, melted and cooled
Filling
4 eggs
114 oz can sweet condnsed milk
4 ts lime or lemon zest
1/2 c lime or lemon juice
Preheat the oven to 350° F. Mix the crackers with sugar and butter. Press the mixture into a nine inch pie dish evenly to the bottom and up the sides. I like to use the bottom of a flat cup to help along. Bake the crust until fragrant, for IO to 15 minutes. While it is cooling, whisk all the filling ingredients and pour into the shell. Turn the oven down to
325° F and bake the pie until set, but still wiggly in the center.
Just before serving, whip the cream with a little sugar to soft peaks and spread on top of the pie.
