
It is not easy to find sour cherries in America – only in some farms or frozen online. This pirog, sour cherry preserves, and Vishnovlra (sour cherry liquor like Kirsh) have inspired me to grow a sour cherry tree in my garden.
6 tbs unsalted butter at room temperature 3/4 c sugar
4eggs
1/2 c buttermilk or regular whole milk 1 ts vanilla concentrate
11/2 ts baking powder
1/ 4 ts salt
1 c flour
11/2 cup sour cherries, pitted or regular
cherries, berries, apples will do
1 tbs powdered sugar for dusting
Sift flour with salt and baking powder. Heat the oven to 325° F.
In a large bowl cream the butter and sugar with electrical mixer. Mix in eggs, milk and vanilla and continue beating. Add flour mixture and whisk just to combine into smooth and fluffy batter. Pour into oiled and floured pan. Gently drop the cherries on top. Bake for 50-55 minutes or until golden brown. Remove from the oven to cool. Dust some powdered sugar on top.
