Not everybody can stomach the stomach, only the openminded. I usually buy four pounds and always get the “Ewww!” from the cashier. Let’s forgive the lay people, but you my friends, I invite to an introductory shkembe orgy! Tripe Appetizer-half of the boiled tripe I bake, dotted with butter and crushed garlic and hot pepper flakes: a sinful delicacy!

The soup
2 lbs tripe, cleaned to perfection 1 medium onion, diced
2-4 tbs oil, canola or olive
1/2 c milk
2 tbs horseradish sauce
1 tbs Vegeta, MSG free, optional salt and black pepper to taste
Zaprazhka
2 tbs oil
1/2 tbs paprika
Seasoning
5-6 cloves garlic, crushed
1/2 c vinegar, apple or wine red hot crushed pepper flakes
Cover the tripe with cold water, add salt and boil on medium heat until tender.
It will take several hours and water can be added as needed. Do not use a pressure cooker, it will destroy the tripe, or anything else for that matter.
Heat 1-2 tbs of oil, add the diced onion and cook until translucent, then add to the bowl with the tripe. Next add the milk, salt, pepper, and the horseradish. Boil for another 15 minutes.
Remove the tripe and when manageable, cut to one-inch pieces, then return to the soup. Heat 2 tbs oil in a skillet, hold a spoon with the paprika over the soup and poor the oil on top of the paprika to sizzle over the soup.
Mix crushed garlic and vinegar in a small bowl. Serve on the side along with crushed hot pepper flakes for individual seasoning.
