For the Batter
3 eggs
1 c milk or heavy cream
6 tbs butter, melted
1 ts vanilla extract
2/3 c flour
1/2 c sugar
1/2 ts salt
For the apples
4 tart apples, peeled, cored, and sliced
1/2 c sugar
2-3 tbs brandy
1 pinch cinnamon powder
Preheat the oven to 400° F. Whisk together the batter ingredients until smooth. Set aside. Butter a ten inch pie plate and place in the oven to heat.
Melt butter in large skillet over medium heat. Add apples, 1/2 cup sugar, and brandy and cook for about five minutes, until the apples are glazed.
Remove pie plate from the oven and immediately pour in half the batter. Arrange the apple slices over batter, then pour the remaining batter over apples. Sprinkle I tbs sugar and a pinch of cinnamon over and bake the clafoutis until it is golden and set in the middle, about 25-30 minutes. Drizzle with warmed reserved apple juices.
Serve hot with a scoop of vanilla ice cream.
