
1/2 head of Savoy cabbage
2 large carrots, grated
1/2 c celery leaves, finely chopped
1/2 c parsley leaves, finely chopped
3 tbs of oil, olive or sunflower
2-3 tbs of vinegar, red wine or apple salt to taste
Thinly slice cabbage into a big bowl. Sprinkle with salt and lightly squeeze with your hands to crunch the fiber and release healthy juices. Add the grated carrots, celery and parsley leaves.
Sprinkle with oil and vinegar, toss gently. Cover and place in the refrigerator to chill and marinate for at least an hour.
