My sister, Ilsa always says that she can’t cook and then she comes up with this ultimate appetizer- elaborate, original and delicious. Every time Jivko come home from abroad she makes that cake.
7-8 crepes
2 c mayonnaise
2 c diced pickled cucumbers
2 c diced ham
1 c diced pitted olives
1 c diced hard boiled eggs
1 c shredded Mozzarella cheese
On a cake platter place the base crepe.
Spread a thin layer of mayonnaise.
Cover evenly with one cup of the ham.
Layer another crepe on top and spread with mayo again. Cover this one with pickles.
Continue in the same fashion alternating different ingredients-olives, hard boiled eggs, ham, pickles. Spread mayo on each crepe and on the sides of the cake. Top generously with shredded cheese.
This cake taste better if made a day ahead.
If you don’t have time for making the crepes you can use the Ikea’s frozen ones- the are the closest to homemade.
