
1 black turnip root, peeled
2 large carrots, peeled
1 beet root, peeled
4-5 black olives
3 tbs olive oil
1/2 lemon, the juice
salt to taste
Prepare the dressing by whisking lemon juice, salt and oil in small bowl. Grate the turnip in a food processor. Squeeze between your hands to drain the excess flatulence-inducing juices and transfer to a salad bowl.
Grate the carrots and add to the salad. Grate the beet root and set aside. Drizzle the dressing over the salad and mix lightly. Just before serving, top with the beets. Their color is beautiful but very strong and may bleed to the rest of the vegetables. That’s why mix very gently with a circular motion. Garnish with olives.
