Mayonnaise

5 egg yolks
1 2/3 c canola oil (1/3 c per egg)
lemon juice and salt to taste
Whip the egg yolks with a fork. Start adding the oil drop by drop at the beginning, then in small swirls while beating continuously. It will magically thicken, expand and fluff. Season with lemon and salt. Do yourself a favor and use the mixer.
