1/2 onion, diced
1 medium carrot, diced
2 tbs oil
5 cwater
1 lb ground beef
1/4 c rice
1 egg , separated yolk and white
2 ts chubritza or thyme
flour for coating
Mix the meat, rice, egg white, thyme, black pepper and salt. Make pecan-size balls and roll in flour. Saute the onion and the carrot in oil. Add the water, bring to a boil, drop the balls in and cook on medium heat until done. Make ,(pstrozka-whisk the egg yolk with the yogurt. Add to the soup gradually, stirring well. Adjust seasoning, add lemon juice and parsley.
