
The signature Bulgarian salad!
The name comes from Shopi, peasants that lived around the capital Sofia.
1 seedless cucumber
3 medium tomatoes
3 tbs olive or sunflower oil
1 c grated or crumbled feta cheese
1 tbs chopped parsley leaves
dash of apple cider vinegar (optional)
Peel the cucumber, remove ends, cut in halflengthwise, then each strip in half lengthwise once again. Lastly slice horizontally into 1/2-inch pieces. Core and cut the tomatoes into similar size pieces. Mix the vegetables in a bowl. Lightly drizzle with oil, vinegar is optional. Divide into portions. Grate feta cheese generously over the top of each individual serving. Garnish with fresh parsley. Variations with fresh or roasted green or red peppers are delicious. Enjoy this, like any other salad sipping Ralcia – Bulgarian brandy made from grapes or plums.
