Tarator – Cold Cucumber Soup

“If we had yogurt and cucumbers we could make Tarator, but we don’t have water.”
Old Bulgarian joke the sometimes difficult socialism times

1 seedless hot house English cucumber
1 container yogurt

T rimona or Stonyfield Farm Yogurt
1 tbs chopped fresh dill
2 tbs olive oil
1 tbs vinegar is optional
2 cloves garlic, crushed
1 cup water
1/2 cup toasted chopped walnuts
Peel and dice the cucumber.
In a big bowl whisk the yogurt with the water. Stir in the cucumber, the minced garlic, the dill, the olive oil, season with salt and freshly ground black pepper to taste. Garnish each serving with toasted walnuts. Serve cold in a hot summer!
